 1、发酵法 以碳酸钙为中和剂进行乳酸发酵，用石灰水中和发酵液后经二次结晶，直接生产乳酸钙。发酵原料可用大米糊化糖化液或米粉(玉米粉) 双酶水解液，具体参考乳酸发酵。 2、中和法 在50%的成品乳酸溶液中加入氢氧化钙或氧化钙进行中和反应，然后过滤除去不溶性杂质，再经冷却结晶、分离、干燥得成品。此法 工艺简单，但成本较高。2C3H6O3+Ca(OH)2→(C3H5O3)2Ca+2H2O 3、大米经高压糊化，用水稀释冷至50-53℃，接入黑曲霉菌和德氏乳酸杆菌，发酵得到代谢产物乳酸，然后加入磷酸钙中和，得到 粗乳酸钙，最后再进行精制，或者用碳酸钙中和稀乳酸液，再将溶液蒸发而制得。精制过程是利用氯化镁和氢氧化钙作用生成的氢 氧化镁，它有凝聚作用的性质，使发酵液中的部分杂质和蛋白质凝聚后除去，然后经真空浓缩，结晶，精制而得乳酸钙。
